Cresciamo arricchendoci di sapori territoriali, fortemente legati alla tradizione della nostra famiglia ed al nostro passato. La rielaborazione di un ricordo in cucina è ciò che più mi stimola quando devo pensare a come realizzare un piatto. Mi piace considerare aspetti come cromaticità, estetica, leggerezza, oltre che il semplice gusto che quel piatto aveva in origine.
